Miel de Talnete

In an earlier post I sang the praises of one of our favourite culinary ingredients in Guatemala  - 'alcoholic honey'. 

Back then I thought the slightly boozey aftertaste was a result of some acetic residue in the rum bottle it was sold to us in, but have since discovered that it is the distinctive characteristic of this delicious, nearly transparent honey - made by little black, stingless bees of the region which like to live underground or under tree trunks: the Talnete bees (Geotrigona Acapulconis)

(El Talnete is also a town high up in the mountains of Honduras, roughly equidistant from the borders with Guatemala and El Salvador.)
